Hi, everyone! Here’s another keto-friendly recipe! Now, I have a deep love for Chick-fil-a and their chicken nuggets. Don’t even get me started on their lemonade and array of sauces….
Ha, I just got a little hungry there for a second. However, their chicken is definitely not keto-friendly. But I have found a good substitute! Not amazing, but nothing is as amazing as the real thing. Try this recipe and let me know what you think!
You will need:
6 boneless chicken breasts, skinned – total carbs = 0 g
1 cup of coconut flour – total carbs = 16 g per 1/4 cup (Keep in mind only a little is going on each tender; about 2-3 teaspoons)
1 cup of almond flour – total carbs = 6 g per 1/4 cup
3 eggs, beaten – total carbs = 1.2 g (0.6 g each)
4 tablespoons of heavy cream (or any milk substitute) – total carbs = 0.4 g per ounce
2 teaspoons of salt and pepper
About 1 tablespoon of oil (I used vegetable oil, but you can use butter. Both have 0 g of carbs.)
Heat a pan with butter/oil at low heat. Take the eggs and mix with your heavy cream. This will be the egg wash. Make the “breading” by mixing the almond flour, coconut flour, salt and pepper. You can adjust salt and pepper as you please. Then take a chicken breast and cut it in half, vertically. Dip the chicken in the egg wash and then place chicken in “breading” mixture. Pat the mixture on each side and put chicken into pan. Cook until completely done. Make sure heat is on low! The breading will brown before chicken is cooked if the heat is on too high. You will eventually burn the breading in attempt to cook the chicken. Once browned, place on a paper towel and blot off extra oils. Then enjoy! I put my chicken in buffalo sauce (Red Hot Buffalo Wings sauce, which has 0 carbs) and used a Missions Carb Balance Tortilla with shredded lettuce and chopped tomato. I topped it off with a little ranch dressing and a sprinkle of cheddar cheese. Delicious! I’m sure you can also bake them, but I didn’t have enough time to try it. If you attempt it, I would start by baking them at a low temperature, such as 325 F°.
