My Favorite Zoodle Recipe

Hi, everyone! I have had a busy past few months with exams and my latest health scare. I’ve been taking it slow for the past week. This is a 2-days-late Tasty Tuesday…. Tasty Thursday? Anyways, I wanted to release my favorite zoodle recipe. Take note that my serving size is based on one person! #singlelife But I do cook for the entire week.

You will need:

  1. 3-4 large zucchini (you will have some left over) total carbs = approx. 3 g per cup

  2. 1 jar of Bertolli Alfredo sauce of your choosing (I used the creamy basil Alfredo sauce) total carbs = approx. 2-4 g per 1/4 cup 

  3. 1 sausage (or meat of your choice; I used half of the Hillshire Farms Turkey Polska Kielbasa – total carbs = 3 g per 2 oz.)

  4. 1/2 onion, chopped – approx. 7 g per 1 cup

  5. olive oil

  6. salt and pepper

  7. cayenne pepper (for an extra kick)

Take the meat and chop it into about bite size-ish. (This would also be great with chicken!) Cook meat until done (approx 15 min). Take the zucchini and spiralize it with a spiralizer or check out these techniques if you don’t have one: https://youtu.be/ETgPaDQh9S4. Then take the spiralized zucchini and cook it with olive oil until soft (approx. 4-5 min). Mix zucchini in with the Alfredo sauce, onion, and meat. Add the salt and pepper (adjust to taste) and cayenne pepper (to taste). Sorry! I didn’t measure the seasonings and went off of taste! I would say use approx. 2 teaspoons of each, if you don’t know where to start. Let it simmer on low for 5 min. Taste amazing the day after!

Sorry for the presentation! Definitely not a chef like my dad. This is when I used 2 zucchinis, and I decided it would have been better if I used 3 or 4 large ones. You can alter this to fit your perfect pasta-sauce ratio.
