Hey, everyone! I decided to add a new segment to my blog, Tasty Tuesday, where I bring you a recipe to try at home. This year, I am starting low carb diet (AKA the ketogenic diet) due to my history of pre-diabetes and strong family history of diabetes. I want to start cutting down on my carb intake. Now, since my blood sugar is in a normal range, I do not plan to be on a strict low carb diet. I only plan to cut down on carbs. As a warning, cutting carbs down to ≥20 grams a day is a drastic change to your diet and can be hard on your body. Disclaimer: I am NOT a medical professional. I recommend easing into the diet and not going lower than 100 grams without consulting a doctor. I will allow myself one cheat day, where carbs aren’t in the equation.
Today, I’m sharing a breakfast recipe I altered to my liking. Since I cannot have oatmeal or a personal favorite, cream of wheat, on my diet I found a recipe called “Noatmeal,” which is similar in consistency and low carb as well as sugar-free. I purchased everything from Walmart. In fact, I like to buy the Walmart brand, because it is often cheaper and of the same quality.
Here’s my recipe:
1/2 cup ricotta cheese
2 tbsp unsalted butter (I think you can use salted, but I have never tried it.)
3 “shakes” of cinnamon from the bottle
Your favorite sweetener (I used 1 tbsp of Stevia and added one tsp for taste.)
1 tsp vanilla extract
1 tbsp flax meal (for consistency and additional nutritional value)
Combine all of the ingredients except flax meal in a bowl and heat for 45 seconds in a microwave. Mix the ingredients until completely combined. Here’s what it looks like after mixing.
Add the flax meal and stir in. You can the flax meal to your liking. Heat for 15 seconds and enjoy!
I added berries to mine, because I felt it needed something else for taste.
